Growing up watching her mother teach Japanese home cooking in English, Hideyo Ishii developed an early passion for global food culture. As a teenager, her interest deepened through local experiences in the United States and Italy. Since 2003, she has travelled worldwide leading menu development projects and hosting international cooking classes.

In 2006, she became the first Japanese person to obtain AISO certification in Tuscany, gaining attention from local media. Today, she develops the adult chocolate brand YES.SHEKNOWS, serves as a Rum Ambassador in Japan for 10 years, and works as an olive oil consultant, creating innovative menus across Italian, Japanese, Western, Chinese, and Korean cuisines while continuing research into European food culture.

Khai Vu

Born in Vietnam in 1980, Chef Khai Vu moved to the United States at age 11. Inspired by his grandmother’s cooking and guided by his father’s business mindset, his family’s shared love of food shaped his passion for creating modern, high-quality cuisine.

His restaurants have become popular destinations from Las Vegas to Saigon and New York City. In Saigon, Prime Steak Boutique & Chill sets a new benchmark for premium steakhouse dining, while District One Kitchen & Bar in Las Vegas and Taiwan, and Saigon Social in New York City, present modern interpretations of Vietnamese cuisine.

 

 

Lan Vo

Mr. Lan has more than 10 years of experience in the F&B industry and co-founded two successful brands: Topping Beef Steakhouse and The Gangs, a trendy beer garden, both holding strong positions in the market.

In 2023, he launched SOTZ, a company producing quality sauces for consumers, restaurants, and supermarkets, with its first product being a clean-ingredient Habanero hot sauce without artificial preservatives.

In 2024, Mr. Lan introduced Tastemaker Hub, a new business model designed to effectively support the F&B industry in Ho Chi Minh City.

Francis Thuan

Francis Thuan is a celebrated Vietnamese chef known for fire-driven artistry and a deep reverence for local ingredients. After exploring Vietnam and cooking alongside international chefs, he founded Esta and Nephele, a fine-dining dreamscape in a heritage building.​

Nephele’s courses blend regional ingredients with curated wines, while Ethereal bar extends the experience with imaginative cocktails. Thuan’s work embodies harmony between craft and emotion, continually redefining Vietnam’s culinary landscape.
